I’m not always one for a sweet breakfast but this one hits the spot so perfectly I can’t resist repeating it. I came up with this a while ago and now have it a few times a week. As I prepare for my day it’s great to have a no brainer breakfast that satisfies, is super healthy and takes minutes to make. In the rush of a busy morning it’s quite special to have something that looks so pretty too.
It’s easy to not bother with breakfast or just grab a piece of toast but I believe having a meal that is nourishing and sustaining can’t help but guarantee a great start to the day. Best of all, this hearty bowl filled with fibre, bursting with blueberries and scattered with flakes of almond contains less than 300 calories. Not bad eh?
I do a couple of things in advance every few weeks which makes my morning routine of preparing this even easier. I buy a packet of flaked almonds and toast them over a medium heat in a frypan for a few minutes to turn them golden brown. This creates extra crunch and a warm nuttiness. I throw them in a bag so all I do is dip in each morning for a spoonful to sprinkle on top. You can see the difference before and after they have been toasted. Well worth a few minutes effort.
I also buy a big bag of rolled oats and whizz them up in my food processor for a few seconds. This makes the consistency finer so it takes less than two minutes in the microwave and makes a smooth texture without lumps. I use frozen blueberries and just pull them out about ten minutes before I make this. I imagine other fruit would work well too such as grated apple or strawberries. You could mix it up with walnuts instead of almonds. The possibilities are endless.
The other magical topping that I’ve recently rediscovered is maple syrup. I kind of forgot just how much I love this sweet elixir. It is the most expensive ingredient but a little does go a long way. I’m really falling for maple syrup and expect more of it will feature in this space moving forward. You may need to outlay a little bit initially to make this breakfast (about $15 perhaps) but from that you will have many enjoyable breakfasts to start your day. Rolled Oats Topped With Maple Syrup, Blueberries & Toasted Almonds
1/3 cup blueberries
1/3 cup rolled oats (chopped briefly in food processor to create finer texture)
1/3 cup skim milk
1/3 cup water
1 teaspoon maple syrup
1 tablespoon flaked almonds (lightly toasted)
If using frozen blueberries, pull out about ten minutes beforehand.
Combine rolled oats, milk and water in a bowl. Stir and let sit for a minute or two.
Cook on high in the microwave for 90 seconds. Remove from the microwave and stir well.
Top with maple syrup, blueberries and almonds.
